WHere is a home-style interpretation of a drink featured on a new menu. It's a large-volume prepared mix which is loaded with essence of the Christmas time, which makes it perfect for your holiday party. Reserve the remaining syrup for brunch beverages, desserts, or to make another batch of the drink.

Yields 10 servings
For the Citrus Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar
For the Drink (makes 850ml, to serve 10)
400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch
Instructions
To prepare the Syrup: Combine the listed items into a saucepan, heat until it reaches a simmer, agitating until the sugar dissolves. Then, remove from the burner and let it to cool down completely. Transfer into an sealable bottle, seal and store chilled, where it will keep for around four weeks.
To make Batch Mix: Mix the specified liquid ingredients into one big jug, allow it to infuse for an hour, then pass it through , ideally through muslin, making it fully clarified.
For serving: Measure 85ml from the batch mix into your stirring glass containing ice, gently stirring carefully for about 60 seconds until cold. Strain to a frosted cocktail glass or similar, top with the cranberries and complete it using a quick spritz of mandarin oil over the top.
